arrived onsite to check top Southbend convection oven. checked and found oven not heating. troubleshot and found broken burner igniter. also checked voltage from ignition module, no 24 volts. have voltage to module but no 24volts to igniter. ignition module also bad. checked truck stock for module and igniter, igniter damaged and no module. will need to order, return and replace. customer will start using this kitchen shortly, but not right now. 6/29/20 arrived onsite to repair top Southbend convection oven. accessed surface igniter and ignition module. proceeded and replaced hot surface igniter and ignition module. dressed wiring and brought oven into operation. allowed oven to heat and cycle a few times. oven in operation. Also removed foil impeded in fan blower wheel. foil impeded in wheel will cause uneven heat and hard on motor. oven in operation.

Upon arrival found burnt wire connection near the compressor and also found restriction on the capillary tube of Prep Table. Repaired the wiring connection and tried to fix the restriction problem on the capillary tube by heating the tubing while flowing nitrogen gas throughout the system. Charged unit to manufacturer's spec. Started the unit and watched unit's operating pressure. Unit still show sign of restriction in the capillary tube, but it is working better than before. Talked to chef and explained what I did and will return to do a follow up next week. 6/15/2020 Returned to do a follow up on the unit. Customer is not on site. Look through the window and found the old unit was replaced by a new unit. I told customer that i have done everything I can to save old unit when i was here the last time. If it is still not cooling properly , then he will needs to buy a new unit. Talked to Rich D and explained everything to him, he said he will adjust the bill later.

The booster heater had a red light which is for a tripped hi limit. Found hi limit on tank was tripped. Reset. Burner came on and heated. Ran dishwasher. Final rinse temp is now over 185 and recovers okay. Noticed wash temp was at 111°. Found 20 amp fuse open. Replaced with new. Ran cycle. Wash temp now at 160. Rinse temp is over 200. Adjusted down to 170. Temp on side panel says it should be 165. Ran several cycles. All temps now within specs and recovering okay. Back in service.

Middle fryer on front line is reading ignition failure. Looked in sight glass and can see the flame but then it goes out. Checked connections. All secure. Checked microamps on both ignitor. The left ignitor was reading 2 and the right was reading 1.3. Blower is clean. Changed both ignitors. Turn on. Fryer now heating. Adjusted blower air shutter to get a good blue flame. Microamp readings are 2.6. Heated to temp. Back in service.

Arrived to check bottom Angelo Po Combi oven. Power button was closed but screen was not powered on. Checked outlet. Oven was plugged in. Have 120v at outlet. Removed side and front panels. Checked incoming power. 120v to terminal block. Have 120v to power switch and 120v out of switch. Have 120v to the large transformer and 230v out. From there power goes to a 230v/12v transformer behind the control panel. Do not have 230v there. Had to trace out the wires. Found the black wire open. Checked the connections where wires were connected with butt connectors. Tugged on wires and the black wire pulled out. Put on another connector and crimped together. Turn on and now the screen powers on. Once the logo disappeared a warning appeared saying the CO2 and CO needs to be set up. Pressed OK and it gave an E20 error saying the set up is not correct. Need to obtain Flu Analyzer to set up gas. Rich D brought the analyzer. Set up analyzer. Tried setting up gas but was having trouble. Spoke to Leti

Arrived on site to check upper Hatco heatlamp. checked and found 2 bulbs burned out with bad sockets. checked and found heat element not heating. checked and found voltage, 209volts, to infinite switch, but none on output side when turned on. will order new parts, return and replace. per Frank, also quote to replace entire unit. unit also needs 6 wire guards that are missing. 1/15/20 arrived onsite to repair lower Hatco heatlamp. proceeded and isolated electrical circuit. proceeded to replace infinite control and indicator light. repaired burned up wiring. brought heatlamp in operation. element drawing aprox. 9.5 amps. allowed unit to heat in various settings. heatlamp in operation. customer needed access to steamtable for dinner service. will need to return to finish up burned out lamps. customer happy with heatlamps in service. can finish up when return with Blodgett oven parts. 1/17/20 arrived onsite to repair lower Hatco heatlamp. proceeded and replaced 2 lights and socket assembl

upon arrival checked in with Tess. found Booster Heater final rinse only 104 degrees. tested booster and found t stat open turned all the way up. replaced t stat and tested. dish machine was only reading 160. during rinse cycle. turned t stat until pop off blew off and back 1/8 of a turn. pop off not popping but gauge only reading 160 on dish machine. booster is okay. unit is operational, job complete.

Ventless Hood is off. Turned on. Anne-Marie said after an hour the motor got very loud. At first the motor wasn't loud but after a half hour it started getting louder. The motor was getting hot. The bearings are going bad. Need to replace the motor. Also need to order the wheel. Manny at BKI said the blower wheel sometimes doesn't come off easily and recommends cutting the shaft. Will bring a puller and heat and try to remove the wheel but if not then the shaft will need to be cut and a new wheel will need to be installed. Got part numbers from Manny. Spoke to Terri at shop. Parts are not in the system and she will do a P&A. Do not order parts until approved by customer. Terri called me with the prices. I gave them to Anna Marie. They said they will get the parts themselves and call us when they are in. Need to bring a tall ladder. Hood is tall. A short step stool will not suffice. Do not order parts.

Metro warming cabinet - Maintenance says the humidity does not work. It just drops. The hot air thermostat must be satisfied before the humidity turns on. Both the water and hot air elements should not be on at the same time. I set the hot air at 160 and humidity at 35%. Once the hot air was at set point the heat light went off and the light for the humidity came on. It would cycle both elements, one at a time, to maintain set points. Once humidity element was energized I was getting 14-15 amps per leg. Let cycle a while and the cabinet held the set points. When the water element de-energized and the hot air element energizes the humidity will drop. Once humidity is resumed then the percentage rises and the temp will drop. That is normal. Spoke to Dave at Metro. He said the exact same thing. Cabinet is operating normally. Back in service.

arrived on site to check top Middle-by Marshall conveyor oven. checked and found oven not heating, everything else working. dropped control panel door and proceeded with troubleshooting. checked and found wire pulled out of middle switch contact block. contact block broken. extra contact block on right switch not being used. repaired center switch and moved extra contact block to center switch. wired contact block. proceeded and brought oven into operation. oven now heating. oven temperature set point at 425°. oven heated to 426° and cycled off. oven up to temperature. oven in operation. note: also cleaned cooling fans as best as I could.

problem is with the bottom right oven . power on and it shows service 37 and a service 36 which are pressure sensor issues . Turned on data window and checked the pressure sensor and have no voltage reading. Checked and have no power to the connection on the pressure sensor. Checked at the board behind the front panel and the connector for the pressure sensor was off the board. Put it back on and its tight . Run unit and now have the 12vdc at the pressure switch. In steam and combi modes the is 2.7v on the data window. Unit now running and no error codes . Cleared the error code list and unit starts up and no codes show up. In service

Removed old unit and set new Follet Ice Machine in place. Hooked up water and drain lines and made sure there were no leaks. Machine is making ice.

Checked the left Combi Oven unit and all pumps and valves work. Error 25 is a clean jet error but could be caused by no water or clean jet pump or misaligned blower shield. Could also be the quenching valve. Checked all and all work. Door gasket okay. Clean jet pump moves water properly. Ran a rinse without tablets and it completes the cycle. Did a interim clean cycle and okay. No problem found. Possibly of something caught in the clean jet pump. Unit is working at this time. In service .

Waited until product is done and shut off Gas Fryer unit. Pulled forward and removed the back and side cover . Removed the valve and switch the fittings too the new valve . Install back in unit and close up. Unit calls for filtering and customer did add new oil. Heat to set point and customer has chicken in it. Allow to cook and time down and now valve opens and relieves the pressure. The chicken temps out ok. Back in service

Looked over wiring. The VHL Range middle thermostat wire was corroded and broke off of terminal. Also found another terminal that was corroded. Cut off that terminal. Repaired both wires and installed new terminals. Turn on. 28 amps on each. All heating okay. Back in service.

Top oven is off. Power on and left blower comes on but not the right blower as viewed from the front. Open control panel and the right safety switch is wore away and not closing fully. Also the 15 amp breaker to the left of the safety switch was tripped . Reset and now motors run and unit heats. Taped on a spacer to the panel so safety switch closes fully and unit runs. Under 1.5 amp at circuit 15 amp breaker. Will obtain a door safety switch and a circuit breaker and return. In service. 4/3/19 Top oven on but okay to do job. Cut power and replaced the 15 amp circuit breaker left of the safety switch and the safety switch. Also removed motor guards and lubed all 4 bearings and cleaned the motor vents of dust . Power on and restarted unit and it heats to set point and cycles maintaining set point. Bearings quiet . Back in service .

Checked Broiler unit, t couple had 31mv, pilot good and strong. Flame on pilot didn't go down when turning on burners. Replaced pilot safety head. Tested for leaks, none present. Lit pilot and turned both burners on, let heat on hi for 30 minutes. Unit ran fine, got every hot on top set to hi. Unit operational ,job complete.

Arrived on site to check lower Hatco heatlamp, accessed element connections and found far connection and wire burnt. Wire broken off closest end connection, checked element - okay. Pulled new wire to far end of element, reterminated wire and connected to element. Replaced short end of wire and closest end and reterminated. Checked voltage at 241 volts, brought heatlamp into operation and checked amp draw of element at 5.5 amps, heatlamp in service.

Checked Steamer unit, found probes stripped, conv fan motor has 120v going to it but not spinning. Also hi limit was tripped, had to remove side panel to pull and reset because when they put steamer on shelf they installed too far back and not over reset hole. Will try to drill hole so they can reset. Fired unit and let it steam for 15 minutes, seemed okay but will order limit and check gas pressure on return trip. 11/26/18 Pulled out c/I'd and charbroiler to get behind steamer. Removed old hi limit, Probes, blower wheel and can. Installed new. Reassembled. Turned on. Jason from Maintenance said the steamer got so hot it melted the plastic envelope for the schematics. Let heat and observe. Came to steam. Let run for 30 minutes. No failures. Cycled to maintain steam. 4" wc. Showed Jason. He okayed repair. Back in service.

Mike gave me a picture showing how the wiring should be on Dishwasher soap dispenser. Did not see any wires not being used. Spoke to Albert at Champion. Sent him pictures and he said that the wiring is okay on the machine. Had me check power on the secondary side of the transformer. 120v. Said to go from X2 to any point on the neutral terminal. Have 120v. Checked from neutral to the input side of Line Power on the fuse block. Have 0v. He checked into it and said it''s wired differently. Now the power comes from the thermostat after the machine is filled. Turned on. Once filled there was 120v at the Line power in and out. Machine is working properly. Chemical company needs to return to hook up the pumps. The machine must be filled before power is supplied to the pumps. Albert said this is non warranty. There needs to be a power quick disconnect at the machine. Currently there is none.

Combi Oven Unit in use on arrival. In steam mode. After a few minutes E20 appeared. This is a meat probe error. Somebody had started a cycle with the meat probe option but there is no probe attached to the oven. This is why the error was occurring. Without a probe the user must use the temp and time only. Set it to time. Checked gas pressure. 5.5" wc natural gas. Ran it in all modes, steam, combi, hot air and retherm. No other errors appeared and no re-occurrence of the E20 error. Spoke to one of the cooks who uses the oven and showed him the E20 error and he said that was the error that was appearing. Spoke to Luis who is the kitchen manager and he said it was an ignition failure. Checked igniter and flame sensor. Cleaned. All connections, secure. No damaged wires. Ran for over an hour and no failure. Cannot duplicate ignition failure. Back in service. Customer will call if it happens again.

Arrived at location and Toaster unit was on, conveyor did stop and unit sparked when moved. I checked, there was no broken or burnt wires. I tightened up all connections to make sure nothing was loose. Checked motor and motor is working, not getting hot, getting correct voltage 120v. Also I adjusted and tightened conveyor belt on unit...Tested unit and motor or conveyor belt haven't stopped, unit heats up to temp. Problem might be intermittent. I suggested to customer to change motor but customer said no as the old one still works. They will continue to use until motor fails.. unit in service

Pulled front and left side panels of Fagor dishwasher, turned unit on, found drain line at drain pump leaking. Will obtain and return, is fitted hose at pump, unit down requires parts. 9/6/18 Installed new hose. Turned on. Ran several cycles. Drained. Filled back up and ran more cycles. Customer ran dishes. Came out okay. No other leaks detected. Wash temp at 150. Rinse at 180. Back in service.

Found Under Counter Refrigerator Unit running, left evaporator iced up. Unit is empty, unplugged to defrost overnight. Iced up due to high activity. Will order defrost timer to install. Ordered through Grainger. 6/27/18 Follow up - Wired in defrost timer to eliminate icing up issue. Was unplugged when arrived, started unit after installing timer temp dropped to 35F and cycled off. Timer enters defrost every 6 hrs for 25 minute duration.
